I recently realized that I have never done a direct comparison, side-by-side, of the various peppers I grow. I also don’t really care for eating fresh raw peppers – I prefer to cook with them. But you can’t really get a good taste comparison when the peppers are mixed with other ingredients.
So I decided to make a basic hot sauce (recipe below). I used the exact same recipe, only varying the pepper. For this experiment I used JalapeƱo, Cayenne, Tepin, Habanero, Ghost, Yellow Reaper, and Carolina Reaper.
Ingredients
- 10 oz. fresh peppers
- 1/2 Cup Rice Vinegar
- 1/4 Cup Water
- 1 tsp salt
Directions
- Blend all ingredients together in a blender
- Set out, covered, for 7 days. Mix daily.
- Blend again as finely as possible
- Strain out remaining solids
So how did it turn out?
