Fermenting hot sauces

I recently realized that I have never done a direct comparison, side-by-side, of the various peppers I grow. I also don’t really care for eating fresh raw peppers – I prefer to cook with them. But you can’t really get a good taste comparison when the peppers are mixed with other ingredients.

So I decided to make a basic hot sauce (recipe below). I used the exact same recipe, only varying the pepper. For this experiment I used JalapeƱo, Cayenne, Tepin, Habanero, Ghost, Yellow Reaper, and Carolina Reaper.


  • 10 oz. fresh peppers
  • 1/2 Cup Rice Vinegar
  • 1/4 Cup Water
  • 1 tsp salt


  • Blend all ingredients together in a blender
  • Set out, covered, for 7 days. Mix daily.
  • Blend again as finely as possible
  • Strain out remaining solids

So how did it turn out?

I don’t know yet! I’m doing the final batches this weekend. Check back for results!
